Just finsihed a new build and did the "Hello World" plot on an egg and it looks good but the text is mirrored when printed on the egg. Being new to Inkscape and the Eggbot both I searched to see if I needed to do something before plotting in Inkscape to change this but found no mention. I am confused if I setup something wrong (rechecked motor1 and motor2 color connections) or I need to process the Inkscape drawing in some way.
Please nudge me so that I may fix the text prinitng.

Check the motor wiring-- if a pair of wires is reversed, this will happen. Whether or not that's the case, you can fix the symptom by checking the option box to reverse one (or both) of the motors in the "Options" tab of Eggbot Control.

Thanks for the quick response. I found the motor reversal options and the egg motor reversing fixed the problem (I guess I did not really have mirroring of the text).
The motor wiring was correct based on the diagrams in the assembly document but it just reverses its direction.
Problem resolved!
